After harvesting, fruit and vegetables ripen until they finally rot. This process can be inhibited by storing the products under conditions of reduced oxygen and an increased carbon dioxide concentration. The storage time is significantly increased while quality and taste remain unaffected.

Depending upon the storage conditions a differentiation is made between three primary warehousing processes:
